So this is a very interesting story. It all started in Korea with some of my students. Several of my students have been overseas to study in the U.S. Most went to large cities like L.A., New York, or Chicago. Well on one occasion we were discussing Korea town in L.A and one of my students brought up that there is an awesome taco truck that sells kimchi tacos and they are amazing. Kimchi tacos? What type of fusion is that? You've guessed it: Korean and Mexican.
Well six months later at our bible study, our friend, Joel To mentioned there is a kimchi taco truck (Koi Fusion) that roams around Portland and you can check their twitter for locations. No way!! I can't remember how it even came up. Probably Patrick was talking about how much he loves kimchi.
Then about a week ago my brother Aaron and I were discussing our soon to be taco truck party in June and how we need to started testing tacos for our birthday party. Well, Aaron said that he was talking with one of his youth students about taco trucks and his student told him about Koi Fusion and how great they are and they cater parties. Oh man!!
I couldn't take all this mention about kimchi tacos anymore!! So, tonight Patrick and I went downtown to 20th and Burnside and had kimchi/bulgogi tacos and a kimchi/short rib burrito and we were so content. The guy gave me the caterer's business card and said they love to do parties. I guess they have a restaurant on 13th and Lovejoy.
My craving has now been satisfied and I have found a new taco truck that I love!! On the way home I told Patrick we should buy some kimchi to cook with. He looked at me like I just told him I want to shave my head!! I think we might have a potential front runner for our party.
